  • 4 oz manchego, sliced (if you can’t find manchego, you can substitute with parmesan or your choice of cheese)

  • 4 oz halloumi, grilled ((if you can’t find, you can substitute with queso blanco, fresh mozarella, queso panela, etc or your choice of cheese)

  • Fruits & Extras:

  • 1 cup cherry tomatoes

  • ½ cup canned artichokes

  • ½ cup kalamata olives

  • ½ cup roasted red peppers

  • 1/2 to 1 cucumber, chopped in slices

  • Dips & Crackers:

  • ½ cup hummus

  • ½ cup tzatziki spread (if you can’t find this spread, you can substitute with your choice of spread)

  • 1 cup pita chips

  • A few slices of lightly toasted bread
